For most of the country, January can be a dreary cold-hearted month. The joy of the holidays fades, days turn dark way too early and the windchill turns the temperatures from icy to painful.
However, the fine folks at Burke & Wills on the Upper West Side of New York City have given us a very tasty reason to brave the blistering cold. The ‘Burn for You’ cocktail is a delectably warm cocktail that warms your bones with layers of several rums, unexpected sweetness of pineapple and the decadence of cream.
The cocktails creator, Tim Harris, explains, “I wanted to make a warm cocktail that stood out from the usual hot toddies and ciders one typically finds this time of year so decided to go a little tiki. The spice and sweetness from the rum blend plays off the garam masala spices and gets rounded out by the pineapple. Then you sip all this hot goodness through the deliciously cold caramelized pineapple cream.”

- 1oz Plantation Original Dark Rum
- 0.5oz Diplomatico Riserva Exclusiva
- 0.5oz Pineapple Juice
- 0.75oz Garam Masala Agave
- 2oz Chamomile Tea
- Caramelized Pineapple Cream
- 1 part pineapple puree
- 2 parts heavy cream
- In a squeeze bottle
- Grated nutmeg to garnish
GARAM MASALA AGAVE
3oz coarsely ground Garam Masala per quart agave
(Use whole Garam Masal Mix & Grind in Blender)
Boil. Sit for 30 minutes. Strain.
