Katana Kitten in the West Village became an instant hit and industry hang-out from the moment it opened its doors this past summer. Of course, this is no surprise considering that beloved bartender, Masahiro Urushiro at the helms of this Japanese-American concept.
With the title, Director of Deliciousness, Masa and his talented team deliver a solid all around menu with some banging Highball and Boilermaker offerings. However, it is the electric blue Calpico Swizzle that has been capturing guests and instagram’s heart. Although it is not on the current menu that changed in November 2018, this is certainly a cocktail that we want to share with our thirsty friends. Also, maybe if we are lucky, they will put it back on a future one down the road.
We asked Masa about the drink and explained, “The key ingredient of this drink is ‘calpico’, yoghurt-tie beverage staple to Japanese childhood of all generations. The other ingredients are added to this drink for balance highlighting calpico’s character, unfiltered sake for creaminess, citrus juice & dry sparkling wine for acidity, and touch of blue for my friend Professor Briars.”

Calpico Swizzle Recipe
- 3/4 oz. Bombay Sapphire East
- 1/4 oz. Giffard blue curacao
- 3/4 oz. Murai Nigori genshu sake
- 3/4 oz. calpico
- 1/2 oz. lime juice
- 1/4 oz. simple syrup
- 3/4 oz. Gruet blanc de blanc
Swizzle with pebbled ice, serve in a Pearl Diver and garnish with mint sprigs + Filthy Red Cherry + generous amount ground (fresh) sansho pepper.
