Campobello at The Roosevelt Room in Austin

At The Roosevelt Room in Austin’s warehouse district, it’s all about the cocktails. With an extensive menu including 53 classics, along with a selection of 9 house creations and a selection of beer, wine and spirits, The Roosevelt Room is a must for any serious tippler.

With summer coming to an end, and fall in sight, the Campobello cocktail is a playful yet flavorful and serious beverage, made with coconut vodka, fresh pineapple juice, lime juice and a housemade Thai herb syrup.

“The Campobello is a refreshing Collins-style drink inspired by the flavors found in Tom Kha soup,” explains Caer Ferguson, bartender at The Roosevelt Room. I inherited a huge amount of Cîroc Coconut when I took over the bar manager position at The Eleanor [the event space at The Roosevelt Room] and made this cocktail to move through some of those bottles. It ended up being so popular that, even when we ran through our back stock of coconut vodka, I added it to our Eleanor Roosevelt-inspired menu. We named it after the island where Eleanor and Franklin Roosevelt had their vacation home.”

Campobello recipe and preparation

  • 1.5 oz. Cîroc Coconut vodka
  • .75 oz. fresh pineapple juice
  • .5 oz lime juice
  • .5 oz Thai herb syrup (simple syrup, cold-infused with Thai basil, lemongrass, cilantro, jalapeño flesh and ginger coins)

Shake all the ingredients and pour over fresh ice in a Collins glass with a straw. Fill with sparkling water. Garnish with a lime wheel and a sprig of Thai Basil.
