Global hospitality veteran Kurt Zdesar is the founder and owner of Chotto Matte, and spearheaded the expansion of Nikkei cuisine – a dining concept masterfully blending Japanese and Peruvian flavors. Debuting in London, Miami was the obvious first U.S. outpost for his vibrant restaurant. Every six months, Zdesar updates his menu including cocktails, with new and unlikely flavors, that are expertly curated to complement his delectable dishes.
Steak and Sushi Sundays at Chotto Matte
We suggest the zesty and herbaceous WABI-SABI -mixed with Roku gin, Caravedo Quebranta Pisco, Dry Vermouth, Aji inca, Acacia Honey, Kumquat, Grapefruit, Lemonade and Bitters. It compliments the seafood from Chotto Matte’s exclusive Steak and Sushi set menu available on Sundays
The Steak and Sushi Sunday prefixed menu includes an edamame starter, followed by a selection of Nigiri, such as Sake Nigiri – salmon, ikura, and shiso, and Branzino Nigiri with mustard miso and picante honey salsa. Along with Shrimp Tempura and Spicy Tuna rolls are sushi bites of Spicy Tuna Crispy Rice with tuna tartare, Peruvian chili, and Yellowtail Jalapeño Crispy Rice with smoked jalapeño wasabi and micro cilantro.
The finale entree is a juicy American Wagyu Alcatra steak, prepared churrasco style on the robata grill, and served with red anticucho butter, green beans tempura, and a creamy smoked purple potato mash.
This protein-rich dish pairs well with the LA CHAKANA -a boozy cocktail smoked tableside with woodchips, and made with Hennessy VS cognac, Ilegal Joven Mezcal, Chotto Matte’s own Vermouth Blend, D.O.M Benedictine, and Bitters.
When you’re ready to end your evening do so with THE ESPRESSO MARTINI -shaken with Ketel One Vodka and Cold Brew Coffee. For dessert, we highly recommend the Magic Chocolate Ball which is set aflame tableside to melt into the accompanying dulce de leche treacle cake, peanut butter butter ice cream, and white sesame sauce.
