Crafted by Corsair: Beer Dinner Series at Miami’s Turnberry Resort

CORSAIR Kitchen & Bar, at the elegant JW Marriott Miami Turnberry Resort & Spa, is hosting a monthly Beer & Dinner Series highlighting craft beers from local South Florida breweries. We recently had the extreme pleasure of experiencing such a dinner paired with beers from Funky Buddha Brewing, and hosted by their Head Brewer Ryan Sentz.

The scrumptious 4-course menu was crafted by Corsair’s Executive Chef Gordon Maybury and Chef de Cuisine Derrick Connor along with Chef Jeff Vincent from Funky Buddha’s Craft Food Counter & Kitchen.

Beer Pairings at CORSAIR Kitchen & Bar

The evening kicked off with a tasty beer cocktail created by Corsair’s Food and Beverage Manager, Michael Meredith.

Welcome Beer Cocktail

Mixed with one of Funky Buddha’s core beers, Floridian Hefeweizen (an award-winning wheat beer; 5.2% ABV), housemade Caraway Seed and Cardamom Honey Syrup, Lemon Juice, Orange Juice, Aromatic Bitters and Mango-infused Dark Rum.


The menu started with a decadent Duck Prosciutto + Fig Salad topped with lardons (fatty bacon) braised in Funky Buddha’s Maple Bacon Coffee Porter.  The starter was also companied by the brewery’s limited released Maple Bacon Coffee Porter (6.4% ABV), most beloved for its rich maple and roasted coffee flavor and smoky bacon finish.

Followed by a superb Seared Diver Scallop + Panzanella salad, topped with polenta croutons, that was matched up with the zesty Dreamers of Dreams “Barrel Aged” Saison (8.3% ABV) matured in Chardonnay barrels.


Maple Bacon Coffee Porter

For the main course, we gormandized on Pork 3 Ways –roasted tenderloin, pork belly and braised St. Louis rib, expertly paired with the whiskey-forward Manhattan Double Rye Ale (12.7% ABV) from Funky Buddha’s seasonal Mixology Series.

To emulate the classic rye cocktail, the brewery blended a double rye ale aged in High West Distillery rye barrels with a Belgian Tripel ale aged in wine barrels and, then, was infused with herbs & botanicals.


No Crusts Brown Ale + PB&J Beignets

For the sweet ending, which came much too soon, we were presented with yummy PB&J Beignets served with a fruity No Crusts Brown Ale (6.4%ABV), Funky Buddha’s infamous peanut butter & jelly brown ale.
