Gin + Collins, a posh bar on the lobby level of Miami Beach’s AC Hotel, has a gin-centric drink menu. Head Bartender Nikos Mantzaridis has meticulously tested different styles of gin, from classic Hendricks Gin to the Florida-made Prescribed Spirits Gin, to create more nuanced gin and tonic pairings. Each G&T is served along with its bottle of tonic, so the drink can be altered to the drinker’s taste.
Gin and Tonics at Gin + Collins Bar
A spicy and citrusy G&T made with St. George Botanivore Gin and Fever-Tree Tonic, garnished with allspice berries, plus lemon and orange peels.

AC Tonic (created exclusively for the AC Hotels) is mixed with Bombay Sapphire East, for a robust drink with notes of bergamot, elderflower and fresh citrus.
Zesty Botanist Gin is combined with the citrusy Fever-Tree, Tonic Green Chartreuse, rosemary syrup and basil.
This low calorie drink pairs the juniper-flavored Hendricks Gin with the aromatic Low Calorie Indian Tonic, Mastiha liqueur, cucumber and fennel syrup.
The Prescribed Gin and Tonic
Floral Prescribed Spirits Gin is combined with Elderflower tonic, St. Germain and ginger syrup to create a tart and tangy drink.
