Hacha is located in London’s Dalston district of Hackney, a trendy neighborhood with vintage shops and quirky bars, where young creatives mix in with the established Turkish community. As London’s only Agaveria, this East End hotspot is devoted to Mexican craft agave-based spirits – 25 different Tequilas, Mezcals and lesser-known agave spirits, and authentic Mexican street food.
The bright and airy Agaveria has an inviting bar with plenty of seating. More importantly, Hacha is the home of the legendary Mirror Margarita – which is uniquely clear rather than the typical cloudy and soft lime-colored cocktail. Due to popular demand, the innovative drink is now also sold from the bar as a ready to drink bottled cocktail.
“With the Mirror Margarita I wanted to re-imagine the much loved classic margarita cocktail by keeping its tastes but that also looked entirely different in appearance. I did this by taking a deeper look into the three main ingredients and how they contributed to the flavor profile of a margarita. In particularly the agave plant and its flavor compounds and properties so that we could elevate its notes.
What we found was that the natural by-product of the agave plant is malic acid, which we chose to use in place of the citrus of lime, as well as using our own Hacha sour mix and a carefully selected citrus oils to achieve the uniquely clear appearance and the tart crisp taste of the Mirror Margarita,” says Deano Moncreiffe, the creator of Hacha’s signature serve and co-founder.
Mirror Margarita Recipe + Preparation
- 50 ml Don Julio Blanco Tequila
- 20 ml Hacha Sour Mix
- 1 spritz of citrus oils
Add all the ingredients to a mixing glass, fill with ice and stir to chill. Strain over cubed ice and garnish.
