Drink This Now: Benny & The Jets Color Changing Lemonade Cocktail As Seasons Change

They say when life hands you lemons, you should make lemonade and as the dog days of summer start to remind us the season is coming to an end, we want to do just that. On August 20th, the calendar told us it was Lemonade Day, so we set out to find a lemonade cocktail that felt like the perfect late summer sipper.  Robin Wolf tipped us off to a lemon-y cocktail she created – “Benny and the Jets” at her restaurant Highwater in San Luis Obispo, California. Made with a butterfly pea flow iced cube, the color changing brought on by the lemon juice feels right as we look ahead to the changing of the seasons.

Wolf shares, “All of our cocktails are inspired by our favorite rock musicians. Who better for this sparkling, whimsical, color changing sipper than Captain Fantastic himself, Sir Elton John?”

Newly opened in 2022, Highwater SLO is a Coastal California restaurant and cocktail bar focused on our three favorite things : Cocktails, Eats, and Tunes. With rock mural walls and a groovy vintage vibe, the folks at Highwater assure their guests that they are “always ready for a good time.”

Benny and the Jets – Recipe

  • 1.5oz Vodka
  • .5oz Elderflower Liqueur
  • .5oz honey syrup (1:1 honey and hot water)
  • .75oz fresh lemon juice
  • 1 drop vanilla extract
  • Thyme
  • 3oz club soda

Garnish with wildflowers, thyme, and a butterfly pea flower big cube*

*for butterfly cubes: steep dried butterfly pea flowers (available on Amazon) in hot water until dark blue. Strain and freeze in the mold of your choice. The drink will slowly change color as the cube melts and interacts with the acid in the lemon juice .
