Drink This Now: Spiked Prose from Bibo Ergo Sum

Look for a large red door, somewhat out of place in Robertson Plaza on the edge of West Hollywood (you’ll definitely know it when you see it). Inside you’ll find a stylish cocktail den with a strong Art Deco aesthetic. The surrounding neighborhood isn’t exactly known for outstanding cocktail bars; however, Bibo Ergo Sum magically combines an elegantly designed space and perfectly executed cocktails with a fun and approachable atmosphere. Both novices and experienced drinkers alike will feel at home here.

Bibo Ergo Sum’s cocktail menu is divided into three sections corresponding with three different drinking “eras.” It’s certainly worth a few visits to sip your way through and explore each one, but our favorite section might be the one titled Present & Beyond. The beverages in this collection are aimed at becoming contemporary classics that marry familiar flavors with innovative techniques. A stand-out was the Spiked Prose, a decadent and rich Scotch based cocktail with a thin float of coffee cream and smoky Islay scotch.

Spiked Prose recipe + preparation

  • 1 oz. Blended Scotch
  • .75 oz. Merlot Honey
  • .5 oz. Amaro Nonino
  • 1 teaspoon house maraschino liqueur
  • 2 dashes Peychaud’s Bitters
  • Whipped Coffee Cream
  • Islay Scotch Mist

Combine ingredients (except coffee cream) and stir with ice. Strain into a Nick & Nora glass, and float the whipped coffee cream on top. Garnish with 3 drops of saline and spray of Islay Scotch.
