If your astrological sign is an Aquarius, you should celebrate the season with a signature cocktail crafted by the Cocktail Collective bartenders at Rosina Cocktail Lounge (The Palazzo), The Dorsey Cocktail Bar (The Venetian) and Electra Cocktail Club (The Venetian).
“The Aquarius cocktail is a riff on a Vesper martini,” says Juyoung Kang, lead bartender at The Dorsey and creator of the cocktail. “It’s similar to a 50/50 martini where the base is one half a spirit (gin) and the other half a modifier (blanc vermouth and sherry).” With all of these elements combined, the signature drink is part class and part sass.
For the Aquarians out there, Kang says it’s a “booze forward cocktail but a more balanced version of a martini.” It calms your nerves with blue hues, botanicals and a citrus airiness only an Aquarius can exude.

The Aquarius recipe + preparation
- 1.5 oz. Empress Gin
- .75 oz. Blanc Vermouth
- .75 oz. Manzanilla Sherry
- Absinthe rinse
Add all ingredients to a shaking tin and shake well. Serve in a coupe glass and garnish with a lemon peel.
