With the 20th anniversary of the cult classic film, “The Big Lebowski,” we have been craving The Dude’s favorite cocktail, the White Russian. Although the classic is always satisfying, we wanted to explore an evalvated option of this drink. One of the most creative twist on the White Russian comes from the mad scientists at The Aviary in New York City. The Aviary Abides was created as a collaboration between Micah Melton and Aidan Bowie.
Bowie describes, “Chef Achatz had asked Micah (Beverage Director for The Alinea Group) to come up with a twist on a White Russian cocktail. He had specialty glasses designed that read ‘The Aviary Abides’ and with the nitrogen draft system that we had we decided to combine the two. The drink is one that we have been working on collectively as a team which is nice. Micah had mentioned that he wanted to work on a white Russian so we worked together to make it.”

Aviary Abides Recipe
- 1 oz Mr. Black
- 1 oz Grey Goose Vodka
- 0.5 oz Kirsch
- 0.25 oz Fernet Branca
- 3.5 oz Coca Cola
- 1 oz Water
- 1 oz Cold Brew Coffee
Mix all ingredients (scaled up) into a keg and infuse it with the nitrogen. Use it on a keg so once it has fully infused you can pull it straight from the keg into a mini carafe.
The carafe is served on the side into a glass on homemade ice cream, lightly flavored with pistachio and cardamom. The ice cream is shaped to look like a bowling ball which is garnished with 3 drops of peychauds and some salt.
