Go Brunching at Overlook Grill

Overlook Grill is ideal for dining during the spring and summer, especially since it sits next to the iconic Boulevard Pool. “Overlook Grill provides our guests with a vibrant poolside atmosphere with delicious brunch items to match,” said Bryan Fyler, executive chef for The Cosmopolitan of Las Vegas. “Indulge in an avocado toast Benedict and a bottomless mimosa package and watch the day slip away.”

Insider’s tip: The bottomless mimosas are made with freshly squeezed juices ranging from orange and pineapple to prickly pear and passion fruit. You can also get unlimited rosé and Bloody Marys.

Try Culturally-Inspired Cuisine at China Poblano

China Poblano from José Andrés is one of the many restaurants at The Cosmopolitan of Las Vegas that offers international cuisine. At China Poblano, you’ll get to taste the flavors of Mexico and China for an authentic dining experience like no other.

“The beauty of China Poblano is that at the heart of the concept, it is a celebration of two cultures, side by side, and the lesser-known historical significance of the two,” said Rick Billings, one of ThinkFoodGroup’s executive chefs.

“While you won’t find any fusion dishes on the menu, you will discover that enjoying a Salt Air Margarita while dipping whisper-thin siu mai in Chinkiang vinegar is a great way to celebrate Mexican and Chinese cuisines together.”

Go Bottomless at the Wicked Spoon Buffet

Wicked Spoon has served more than 6 million guests since opening 10 years ago. At this award-winning buffet, you’ll find classic dishes with a twist, comfort food favorites, and seasonal offerings.

Menu selections that have remained over the years include wicked fried chicken, angry mac and cheese, bone marrow, kale salad, duck wings, salted peanut gelato and Oreo chocolate-covered strawberries. Other notable items include the shrimp cocktail, charcuterie plate, beef carpaccio, soppressata pizza, Asian dirty rice, miso ginger rotisserie chicken and lemon blueberry French toast.

Sip a Guilt-Free Cocktail at STK

STK, known for its sexy steakhouse vibe, has an excellent beverage menu, which keeps your wellness in mind. Mixologists use fresh ingredients and incorporate them into unique guilt-free cocktails. One of which is the Cucumber Stiletto.

“The Cucumber Stiletto is a deliciously refreshing mix of Grey Goose Le Citron, St. Germain, muddled cucumber, and mint,” said Emanuel “Manny” Hilario, president/CEO of The ONE Group. “The Stiletto is the drink of choice for the very thirsty guest of “not your daddy’s steakhouse.”

Explore the Food + Drinks at Boulevard Pool

There are plenty of things to eat, drink and do at the Boulevard Pool. “The resort offers a number of al fresco experiences, such as Sunset Cocktail Hour on Thursdays, where guests can enjoy a hand-crafted spritz cocktail, nosh on small bites, and listen to some upbeat music before heading out for a night on the town or our weekly Dive-In Movies summer series that runs on the Boulevard Pool deck,” Fyler said.

Insider’s Tip: Menu options include crispy shrimp tempura, pork empanadas, mini burgers and spicy tuna tartare on crispy rice. You’ll also find refreshing drinks like the Pink Paloma and Grilled Margarita.

Sit at the Chef’s Table at Scarpetta

Michael Vitangeli, the executive chef of Scarpetta, offers guests a unique way to dine at the Chef’s Table. “The Chef’s Table at Scarpetta goes beyond a typical private dining experience,” Vitangeli said. “It was instilled in me at a young age that sharing a meal is a special event filled with intimate moments to remember forever. I am thrilled to invite guests into our Scarpetta home to enjoy an authentic, Italian-style family dinner reminiscent of what I enjoyed growing up.”

Your evening will begin with a hand-crafted aperitif at the bar, followed by a multi-course meal of fresh antipasti, homemade burrata, Sunday gravy, meatballs, cannolis, and other Italian classic dishes. Wine pairings, tableside presentations, views of the Las Vegas Strip and a personal greeting from Mario Disi, Scarpetta’s general manager, complete the experience.
