In Loxahatchee Groves, near West Palm Beach, Swank Farm provides hydroponic vegetables, edible flowers and microgreens for South Florida’s top restaurants. However, during the winter months through the spring, (January – May), husband and wife owners, Darrin and Jodi Swank, host a series of unique Sunday evening Swank Table dinners in their custom designed pole barn, with each benefiting a different local charity.
Each Swank Table family-style event unites several of the area’s top chefs with mixologists and breweries for an unforgettable evening on their organic 20 acre farm. Swank Table celebrations feature all inclusive meal incorporating product from partner farms, brews, wine, of course, plenty of delicious just picked Swank Farm vegetables.
Welcome Cocktails at Swank Table Dinners
At the entrance of the event, and before heading to the appetizer stations for bites created by guest chefs, each arriving guest is offered a welcome cocktail. The Swank Farms marigold-garnished cocktail that greeted us on our recent visit was a tasty Cactus Margarita by mixologist Jessie Bell, -from her tequila and mezcal focused menu at El Camino in nearby Delray Beach.
“This earthy, floral, and balanced margarita is unlike any other we serve. Its green color and vibrant grassy flavor pair harmoniously with the infused agave and tequila.”, shares the margarita’s creator, Jessie Bell. “The Aqabafaba, a vegan friendly substitute for egg white, round out the flavors and give the drink a frothy texture. The Nopales also have a lot of nutritional benefits, including anti-inflammatory and cholesterol lowering agents. I couldn’t think of a more perfect margarita to serve at Swank Farms.”
Cactus Margarita Recipe + Preparation
- 2oz Olmeca Altos Silver Tequila
- 1oz Nopales Cactus Shrub*
- 1/2 oz White Peppercorn & Cardamom Agave Syrup
- 1/2 oz Fresh Lime
- 1/2 oz Aquafaba
Dry shake all ingredients twice, with and without ice. Strain and serve up, or over ice. Garnish with a dehydrated Lime Wheel and Swank Farms Marigolds.
*The house-made Nopales Cactus Shrub is made with de-thorned and juiced cactus paddles, apple cider vinegar, and sugar.
Guests are invited by the Swanks for a farm tour before taking their seats at their stunningly set table. Their also have the opportunity to sample beers from a local brewery or ‘buy local’ at vendor tables set along the outer perimeter of the barn. A locally curated wine is served during the multi-coursed, farm-to-table meal by top chefs, while live music fills the space with some of South Florida’s favorite local bands.
