Fine Dining with Wine on Fort Lauderdale Beach at Steak 954

Recently, Steak 954, the contemporary, ocean-fronted steakhouse at the W Fort Lauderdale, kicked off a new, monthly wine dinner program. For this first dinner of the series, Executive Chef Johan Svensson created a special menu to pair with PlumpJack Wine –the first winery in Napa Valley to use screwcaps as a wine closure on fine wines.

In the intimate setting of the Azul Room. Chef Johan along with the PlumpJack representative guided guests through the culinary journey, explaining how the flavors of each dish pair with the tasting notes of the wine.

The next wine pairing dinner, with ZD Wines from Napa, is scheduled for Wednesday, June 26, at 7 pm.

Fine Wine Dinners at Steak 954 on Fort Lauderdale Beach

Chef’s four-course menu of signature steaks and a selection of fresh seafood was prepared to be served along with various wines from the PlumpJack Group.

2017 PlumpJack Chardonnay

The Chardonnay grapes are sourced from two vineyards in the Napa Valley, one in Los Carneros and the other in St. Helena, and together contribute citrus and melon notes.  Medium-bodied and pale golden colored, with aromas of lemon, apricot, pear and honeydew to the nose. On the palate, vanilla and butterscotch; followed by bright acidity and creamy finish.

Perfectly paired with the first course of superb Raw Oysters topped with Caviar and Lemon.

2016 Plumpjack Merlot

Their flagship wine, a blend of 96% Merlot and 4% Malbec, is medium-bodied with a deep red violet color.  To the nose, chocolate-covered cherries and black pepper aromas, and rich and juicy black cherry on the palate with firm tannins, followed by a long and spicy finish.

Expertly paired with a decadent duo of Miso Cured Duck and Foie Gras topped with Orange Marmalade and Chopped Pistachios for the second course.

2016 Cade Cabernet Sauvignon

Blend of 77% Cabernet Sauvignon, 11% Merlot, 7% Malbec and 5% Petit Verdot.

Medium to Full bodies with a deep purple-black color, this red blend has aromas of blackcurrants, black cherries and dark chocolate on the nose.  On the palate, blackberry, strawberry jam and licorice with full, but, silky tannins; followed by long finish with fruity and spicy layers.

Nicely paired with the third course, a scrumptious duo of Braised Short Rib and Seared Tuna with Soy Bean Puree.

2015 PlumpJack Cabernet Sauvignon

Blend of 88% Cabernet Sauvignon, 7% Petit Verdot and 5% Malbec.

Full-bodied with a deep garnet-purple color, the Cab-heavy blend has aromas of dark cherry, blueberry, dark chocolate, cinnamon stick and cedar to the nose. On the palate, fruity and spicy with sweet tannins; followed by a long and dry finish.

Classically paired with the fourth course of mouth-watering Dry Aged NY Strip with Truffled Red Wine Sauce, and superbly accompanied by Butter Braised Shallot.

The delicious evening finished with Sakanti Chocolatte Mousse, a light and silky dessert topped with macerated blackberries and miniature coffee meringues.
