SolToro restaurant inside the Mohegan Sun Casino & Resort has been newly redesigned and is bringing an agave haven upgrade to Uncasville, Connecticut. This Mexican bar and restaurant serves up party vibes and a standout cocktail with the Mexican Standoff. Created by Mixologist, Luis Rodriguez, the drink combines floral, vegetal and spicy notes for a delicious signature tipple at SolToro.
“The inspiration of the Mexican Standoff is rooted in many of the things that I grew up with in Mexico,” Rodriquez says of the drink. “Everything in the cocktail are memories of my youth, and in the cocktail I imagine them all competing but complementing each other. That’s why there’s a standoff: the hibiscus, Ancho Reyes, Agave, Tequila, and the sour orange. In Mexico, they have sour oranges; the only way I could recreate the flavor of this was with the Lemon and the Orange bitters because those oranges aren’t imported here.”
Rodriquez continues: “Ancho Reyes is a representation of Mexican cuisine whether it is making a spicy Chile ancho sauce in a guisado or a complex mole sauce with many different peppers. For the hibiscus, we would steep the dried hibiscus flowers in hot water similar to making a tea then cool it and add water and sugar, then serve it over ice to cool off in the hot summer days. Finally tequila and agave, tequila is a product of the Weber blue agave plant and is quintessential to everything Mexican. So this is a SolToro signature cocktail — it has all the elements of Mexico that we at SolToro love: Tequila, Hibiscus, Agave, and the sour oranges.”

Recipe & Method
- 2 dashes Orange Bitters
- .5 oz Lemon Juice
- 1 oz Hibiscus Agave
- 1 oz Ancho Reyes
- 2 oz Don Julio Reposado
Combine all ingredients over ice, shake, and double strain. Serve in a coup, and garnish with a lemon twist.
