Never wait until Friday for a cocktail.

Check out Until Tomorrow, a new neighborhood bar now open in Clinton Hill-Fort Greene delivering elevated cocktails and promising bites by Blue Hill alum, Dave Ralston who plays Executive Chef and partner of the Brooklyn-based joint.

The narrow, 30-seat establishment is dressed with exposed-brick walls, gold leafing accents and wooden fixtures like its walnut-topped bar; tight communal seating in the front and spacious garden in the back for warmer days and nights.

While Ralston is cooking up classy bar bites like sloppy Joes, sausage corn dogs and curry chicken fajitas, Beverage Director Rob Giles (Erv’s on Beekman) is using a “gastronomical approach” to his cocktail craftsmanship by adding uncommon ingredients and house-infused syrups to his “tiki-ish” creations – all to complement the high-end eats, of course.

Example: the Donkey Kong cocktail made with currant bread pudding-infused rum, Blackwells Jamaican Rum, 151 Hamilton Rum, orange and lemon juices, Tahitian Vanilla Syrup, brûléed black walnut-infused bananas and espresso.

And another, from the dedicated “pickleback” section, Rittenhouse rye with Manischewitz garam masala curry and raisin.

You can choose from Old World wines and beers (plus a cocktail) on tap, too.

Rather not wait until tomorrow? Swing by during happy hour for the Altered Beast, a rotating play on “Jungle Juice,” as well as 0ther classic cocktails and satisfying snacks, such as, Snyder’s-inspired honey mustard and onion pretzel bites. Done deal here.
