The Monkey Bar is located outdoors in the beautiful contemporary Hotel Matilda in Mexico’s one number vacation destination, San Miguel de Allende. Their amazing craft cocktail mixology program has made this small open-air bar is the go-to Happy Hour hot spot for both locals and visitors to SMA.
Esau Zuñoga Caballero, head bartender, has created the Otoño (autumn in Spanish), a cocktail perfect for the cool fall weather. “My love of fall colors and smells are represented in this sweet, yet sour, cocktail inspired by my personal favorite time of the year” – shares Esau.
Otoño Cocktail Recipe by Esau Zuñoga Caballero
- 30 ml Mandarin Juice
- 30 ml Natural Syrup
- 60 ml Xoconostle Concentrate (A cactus fruit of the sour prickly pear variety)
- 15 ml Lemon Juice
- 15 ml Orange Liqueur
- 9 Fresh Mint Leaves
- 2 Giant Ice Cubes
- 45 ml Lineal Mezcal
Mix all the ingredients into a cocktail shaker or mason jar, and shake vigorously.
Garnish the rim of a brandy snifter or a balloon glass with activated carbon salt crust.
Double strain the cocktail by pouring it out of the shaker through its strainer lid through a fine mesh strainer held directly above the brandy snifter.
