Pájaro Verde at San Diego’s JSix

There are a lot of reasons to love San Diego, and JSix is one of them. Located in the East Village neighborhood, JSix is all about local and sustainably sourced ingredients, in both Chef Sinsay’s Filipino-inspired dishes and the cocktails.

Enter the Pajaro Verde, a delicious blend of avocado-infused pisco, cilantro and jalapeño syrup, lemon, lime and orange bitters.

“The Pajaro Verde was inspired by the traditional Pisco Sour with a twist I picked up from my dad and his famous avocado smoothies,” explains JSix’s Dyanne Lorenzana. “The avocado purée takes the place of the egg whites concocting a drink even a vegan can appreciate.”

Pajaro Verde recipe and preparation

  • 1 dash orange bitters
  • .25 oz. lemon
  • .25 oz. lime
  • .5 oz. cilantro/jalapeno syrup
  • 2 oz. avocado-infused pisco

Preparation: In a mixing tin, add all ingredients, shake, fine strain and serve in glass.
