On a recent trip to Puerto Rico for PR Cocktail Week, Edrick Colon, Partner & Beverage Director at Antillano, showed me his menu for the bar. The very first cocktail that popped out at me was the Pineapple Vesper. I immediately knew I needed to have this tropical version of the famous James Bond classic cocktail in my life. Edrick Colon shared about he inspiration of the Pineapple Vesper, “I wanted to make a Caribbean variation of the classic vesper martini so I decided to swap out the vodka for a dry white rum to give it the notes of molasses and infuse the Cocchi Americano with roasted pineapple for the tropical aspect. all combined with the notes of Japanese tea of beefeater 24 and lemongrass.”
Pineapple Vesper Recipe
- 1 1/4 oz Beefeater 24
- 3/4 oz Brugal Extra Dry
- 3/4 oz Cochi Americano infused with grilled pineapple
- 1/4 oz Lemongrass tincture
Add all the ingredients to a mixing glass. Stir for about 15 seconds and pour in to your Nick & Nora glass. Squeeze the oil of a lemon peel on top and discard. Garnish with pineapple leaf and crystalized ginger.
