Drink This Now: Pineapple Vesper at Antillano in San Juan, PR

On a recent trip to Puerto Rico for PR Cocktail Week, Edrick Colon, Partner & Beverage Director at Antillano, showed me his menu for the bar. The very first cocktail that popped out at me was the Pineapple Vesper.  I immediately knew I needed to have this tropical version of the famous James Bond classic cocktail in my life. So naturally, I visited the bar to order one un and indeed, my instincts were correct because the Pineapple Vesper at Antillano was hands down one of the best cocktails I tasted in 2021. Trust and definitely head add Antillano to your must-visit bar list in San Juan.  Now more about the cocktail …

Edrick Colon shared about he inspiration of the Pineapple Vesper, “I wanted to make a Caribbean variation of the classic vesper martini so I decided to swap out the vodka for a dry white rum to give it the notes of molasses and infuse the Cocchi Americano with roasted pineapple for the tropical aspect. all combined with the notes of Japanese tea of beefeater 24 and lemongrass.”
