Drink This Now: Rubio Punch at Serena Rooftop in Miami Beach

Miami Beach’s Serena offers a modern interpretation of traditional Mexican cuisine and, primarily, agave spirit based cocktails.  This al fresco restaurant and outdoor/indoor bar is located on the second floor rooftop at Moxy South Beach. Its lushly planted setting and laid back vibe is perfect for leisurely meals accompanied by tasty drinks, such as the refreshingly tart Rubio Punch.  The red violet-colored cocktail is shaken with Mezcal Amaras Verde, which is a more herbal forward, less smoky mezcal -sustainably made from a green 8-year old Espadin agave plant.

“The Rubio Punch was created as if it was an Agua Fresca. In México it is very common to have a meal with flavored sugared water normally from natural fruits or even a flowering plant like hibiscus – agua de jamaica.” 

Award-winning mixologist and Moxy South Beach Beverage Consultant, Christian Rubio adds, “So the idea of the punch was to create an agua de jamaica with mezcal. However, we put a little twist by adding Rosemary infused hibiscus water and a ginger oleo saccharum.”  

Rubio Punch Recipe & Preparation

  • 1.5 oz Mezcal Amaras Verde
  • ½ oz Lime Juice
  • ¾ oz Ginger Lemon Syrup
  • 2 oz Hibiscus Rosemary Concentrate*
  • Fresh Rosemary Sprig and hydrated Hibiscus Flower to garnish

Add all ingredients into tin, add ice, shake. Double strain into a rocks glass, garnish with rosemary sprig and hibiscus.

*Hibiscus Rosemary Concentrate:

Add 4-5 Hibiscus flowers and 2 branches of rosemary to 1 cup of very hot water. Let it sit for about 5 minutes. Strain, and let cool.
