Salt Air Margarita at Bazaar Mar at SLS Brickell

Every now and then, you have a cocktail that just opens your eyes to new sensory experiences and changes the game for you.  Most folks know Chef José Andrés for his major influential impact on the culinary side, as well as his outstanding humanitarian efforts, but turns out that he is also quite the genius with cocktail creation.

The Salt Air Margarita at Bazaar Mar at SLS Brickell, is as truly over the top sensory experience on so many levels; it is equal parts a beautifully balanced cocktail and over the top Iinstagrammable stunner. This ambitious cocktail concept was actually inspired by a bit of an obvious place.

Chef Andrés explains, “I love margaritas but never liked the salt on the rim – it’s too harsh! I always wanted something that wouldn’t overpower the drink, but would still let me have that amazing taste of salt with every sip.”

As for it’s conception, Andres continues: “One day I was sitting at the beach, thinking about how the waves hit the rocks and the sand. It makes this foam that sits so beautifully on the ocean water. That image inspired this margarita, with a foam on top that we call salt air.” Clearly, there is nothing that José Andrés can’t do, we will dream of drinking these Salt Air Margaritas by the water in Miami and, perhaps, dream of Andrés 2020.”

Recipe

For Margarita

  • 1 ½ oz. of Cabeza Tequila
  • ¾ oz. of Combier L’Original
  • 1 oz. of fresh lime juice
  • 1 oz. of simple syrup

For the Salt Air

  • 2 cups of water
  • 1 cup of fresh lime juice
  • 4 tbsp. of kosher salt
  • 2 tsp. of Sucro

DIRECTIONS:

How to Make the Margarita: Combine all ingredients in a cocktail shaker, add plenty of ice and shake vigorously. Strain into a chilled stemless martini glass. Garnish with four tablespoons of salt air (see recipe below).

How to Make the Salt Air: Combine water and Sucro in a medium saucepan. Activate the Sucro by heating the mixture to at least 70 °C / 158 °F, whisking constantly. After the mixture has reached temperature, remove from heat and whisk in salt. Cool mixture in an ice bath. Stir in lime juice. With an immersion blender, blend at the surface, being careful to avoid splashes, until bubbles form. With a spoon, carefully skim the “air” and place on top of the drink.
