And Gold Cash Gold – located in the Corktown area of the city – has a new cocktail menu for the season, broken down into categories: Sunlight (bold and bright), Starlight (dry and effervescent) and Moonlight (dark and boozy).
Created by Gold Cash Gold bartender Marlowe Johnson, we are digging the Second Child, a picture-perfect tipple from the Starlight section made with Don Q Cristal rum, citrus cordial, lime, lemon, egg white and flower tincture.
“The Second Child is three of my interests rolled into one,” explains Johnson. “It’s a daiquiri sour, essentially, and introducing people to more rum cocktails is an essential part of my bartending.”
Even better: it’s a sustainable cocktail.
“We started the program eliminating 90% of all juice and then moved to produce as little waste as possible in our ingredient usage,” Johnson continues. “The Second Child really showcases our house citrus cordial — a balmy, floral, Rich syrup made from the spent and peeled fruit from the bar. Finally, it’s a bit of a choose your own adventure cocktail. Depending on which of the three bitters one drinks through, the entire profile of the drink changes.”
