Scott Conant‘s Scarpetta is one of the signature restaurants at the spectacularly massive and glamorous Fontainebleau Miami Beach resort property. And now, Conant is bringing a fresh vibe to the spot: Sorso, which means “sip” in Italian, is a seasonal cocktail lab and infusion pop-up bar located inside Scarpetta’s gorgeous lounge.
After much experimentation, Fontainebleau’s Food and Beverage, Syed “Sy” Ali, and Scarpetta’s Lead Bartender, Daniel Love, have perfected one of mixology’s hottest trends – cocktails infused in a cold drip cocktail tower.
Two Japanese cold drip towers have been re-purposed so each mid-section glass chamber holds a specific mix of seasonal herbs, flowers, fruits, nuts and/or spices as per cocktail recipe, sourced and concocted by Love. Then, the recipe’s spirit is poured into the top glass chamber, which travels down into the selected ingredients to infuse with the flavors for up to 24 hours.
The end result of the cold infusion process drips into the decanter waiting at the bottom of each tower. Each infused cocktail receives a particular glass, ice cube, and garnish as part of the final cocktail preparation.
Conant has also created menu of bar bites to complement Sorso’s cold-brew cocktail infusions. Snacks and light bites include, Scarpetta Stromboli -with caponata, Spiced Almonds, Wild Mushroom Arancini -with truffle oil, and an Antipasti Board – with selections of salumi (Italian cold cuts) and cheese.
Creative drinkers are encouraged to create their own drinks from Sorso’s house-infused spirits, shrubs and syrups. However, here are the signature infusion cocktails regularly dedicated to the towers as well as a selection of cold brew infused cocktails on-hand:
Infusion Towers at Sorso
Rich and intense cocktail infusion, with big vanilla flavor, that sips like an Old Fashioned. Woodford Reserve bourbon infused over almonds, vanilla beans and dried apricots, and finished in an orange peel-smoked glass with Amaro Montenegro.
Garden High Ball
Have your garden, and drink it, too. Stoli vodka infused over cucumbers, basil and tomato and finished with Yuzu tonic.
Infused Cocktails at Sorso
Looks gorgeous, but this effervescent and citrus-y cocktail tastes even better. Barr Hill gin and grapefruit soda infused in a cold drip cocktail tower, with a pea flower infused ice cube
Quite spicy and very nice – Jalapeno-infused Corazón tequila, Sauvignon Blanc, St. Germain, lemon, agave, and garnished with Jalapeno pepper and pink peppercorn.
So light and delicious, it’s drinks like an agua fresca, but with a pleasant kick. Watermelon infused Russian Standard vodka, Aperol, cranberry, lime and mint.
Be prepared for the bite from cilantro in this sweet and pretty cocktail. Herradura tequila infused with pineapple, Cointreau, cilantro, lime and house made pineapple shrub.
