Bread and brews have always gone hand in hand, and now The Butcher’s Daughter’s in L.A. is bringing the best of the best together. L.A. wellness-guru and owner of The Butcher’s Daughter, Heather Tierney and her team of renowned chefs have partnered up with Berkeley-based Trumer Pils to debut “A Toast To The Weekend”, a new program of beers and breads which have been inspired by the ingredients of the popular California-brewed beer and offer the perfect pairing to enjoy on the weekend.
Brewed in Berkeley, California, Trumer Pils is a handcrafted pilsner that, to this day, remains true to style and follows the centuries old Austrian recipe. Trumer Pils embodies the true meaning of a California state of mind – light, refined and refreshing – the perfect pairing to be enjoyed at the beach, on the boardwalk, in the mountains, or simply in your very own backyard – and the ideal addition to the menu at The Butcher’s Daughter in Venice.
This new collaboration came to fruition after The Butcher’s Daughter founder Heather Tierney and her team of chefs visited the Trumer Braurei in Berkeley and were able to experience Trumer Pils firsthand; seeing, smelling and tasting the ingredients, engaging in the brewing process and spending quality time with Trumer Pils brewmaster Lars Larson.
Working closely with Larson, Tierney and her team developed signature house-made recipes based on Trumer Pils’ centuries old recipe (c. 1601) and the four pure ingredients with which the brew hand-crafts its award-winning pilsner – water, malt, yeast and hops.
“The experience going out to the Trumer Brauerei was equally inspiring…and fun!” says Perry Ledesma, Executive Bread & Pastry Chef at The Butcher’s Daughter. “We had the incredible opportunity to learn about the pilsner, its ingredients and the brewing process from Brewmaster Lars Larson. As a pastry chef and beer drinker, I’ve always been fascinated with the brewing and bread making processes – two different outcomes, which use similar ingredients and fermentation methods.”
A historically sustainable method, explains Ledesma, “bakers used to skim the fermented yeast off the top of the top of brew barrels and having the chance to explore this history further – see, smell, taste the ingredients, take them apart and recreate them into something new was challenging.”
He continues, “when we started making the breads and learning more about the hops, we saw how it interacted with the different flour – resulting in different tastes which informed the flavors that best paired with it.”
Offering include Sourdough Loafs, Hops Salts, Toasted Barley Honey, Brown Barley Butter, Pretzels With Hop Salts, Pilsner Dijon Di and Trumer Spice Blend.
Guests can order the delicious, beer-inspired breads and spreads at the restaurant in Venice, which when paired with Trumer Pils make for the ultimate “Toast To The Weekend.”
