Spiegelworld’s Italian American Psychedelic restaurant Superfrico recently launched a new cocktail menu fit for the season.
“We wanted to focus on cocktails that highlight spring flavors,” said Mauro Villalobos, Superfico’s beverage director. “We also challenged the bar team to think outside the box.”
Villalobos says each cocktail uses the freshest, most seasonal ingredients possible. In the Make It Snap Pea, bartenders use gin with white miso, snap pea syrup, lime juice, aquavit, and a mint garnish to craft the perfect cocktail.
If you’re looking for a spiked super juice with a spicy kick, consider the Bring That Beet Back cocktail. It has vodka, beet juice, ginger juice, Genever (a grain spirit from Holland), and Genepy (a French aromatic herbal liqueur).
The most important part of the cocktail, however, is the guajillo and ancho syrup with turmeric, which gives it some depth with notes of smokiness, spice, and tang. “Drinking this mixture feels like you’re being health conscious while catching a buzz with a tasty beverage,” Villalobos said.
Other highlights include the Spiritual Carwash, which uses palo santo and sage with gin, and the One More Time With Feeling, a spirit-forward cocktail containing bourbon, two types of amaro, sherry, and maple syrup, garnished with flaming cherries.
The new cocktails are $22 each, with a few non-alcoholic options priced at $12.
