Cilantro is considered by many as one of the most polarizing herbs in the world. I personally love the bright aromatic pop of cilantro and was raised enjoying it in a ton of dishes by my grandmother and mother. Sorry haters, I don’t know what you are talking about when you say it tastes like soap and blame your genetics because you are missing out. As Team Cilantro at Thirsty, we were very excited to turn our focus this spring on the ‘Spear of Summer’ at Vineapple Cafe in Brooklyn that showcases cilantro with the Icelandic Brennivin adding in flavors of caraway, cumin and anise. This herbaceous earthy cocktail is definitely an order for us this spring.
Jen Sandella, who came up with the drink shared, “I created this drink as a summer cooler because I absolutely love savory cocktails. I think the brightness of the cilantro plays perfectly with the carroway profile in the Brennivin. The overall cocktail balances gentle sweetness and savory notes perfectly and it reminds me of a summer picnic. I love playing with Brennivin because it brings me back to some truly incredible moments that I’ve been fortunate to experience in Iceland. It has a strong sense of place for me and I love to share it with others.”
Spear of Summer at Vineapple Cafe by Jen Sandella
- 1. 5oz Brennivin
- .75 oz Fresh Lime Juice
- .75 oz Simple Syrup
- 2-3 sprigs of Fresh Cilantro
Add all your ingredients to you shaker. Shake hard with ice. Dirty pour into a wine glass. Top with fresh ice and a splash of soda. Garnish with a dehydrated lime wheel.
