What to Drink at the Brand-New Delilah at Wynn Las Vegas

Delilah, a swanky Hollywood supper club from the h.wood Group, will make its Las Vegas debut at Wynn Las Vegas on July 14. At the helm of the beverage program at the Las Vegas location is Mariena Mercer Boarini, resort mixologist for bars and restaurants at Wynn and Encore.

Mercer Boarini, named “Top Bartender in Las Vegas” and one of the “Top 10 Female Bartenders in the World,” has worked hard over the last few months to craft a unique cocktail experience for the new supper club.

Ahead of its grand opening, Mercer Boarini spoke with Thirsty and unveiled some of the signature libations that guests can look forward to and the inspiration behind them.

The Stepford Wife

According to Mercer Boarini, the Stepford Wife is a “glamourous play on the classic French 75 cocktail,” made with Grey Goose Essences strawberry lemongrass vodka, spiced lychee and rosé Champagne, served in a pink glass with gold dust on the side.

But that’s not all to this intriguing drink. The Stepford Wife is a beautiful cocktail that offers an aroma of splendid femininity and whimsy. It comes with a vintage atomizer of Eau-de-Delilah, “an edible Parfum that I made with Delilah in my mind as my muse,” Mercer Boarini says.

Pillow Talk

Next up on the Deliliah cocktail menu is the Pillow Talk, which happens to be an elegant Dirty Martini with Grey Goose vodka, Manzanilla sherry, and olive gastrique, which is a brine made of rosemary, olive juice, chardonnay, thyme, Champagne vinegar and capers.

“The enchantment of the room is the perfect atmosphere to enjoy a Dirty Martini, so it needed to be superlative with multi-dimensional flavors of bright acidity, salinity, and herbaceous notes,” Mercer Boarini says. “The garnishes are as stunning as the build, with Castelvetrano olives stuffed with Roquefort cheese, pickled green cherry tomatoes and vermouth brined cocktail onions.”

Film Noir

The Film Noir is Delilah’s timeless Old Fashioned Mercer Boarini says. It has Basil Hayden’s dark rye, apple brandy, and coconut chai syrup, made from pink peppercorn, green cardamom, and coconut Rooibos tea.

The cocktail is served over a large sphere with the Delilah flower embellished on the inside. “The design of the glass captures the light almost like a spotlight illuminating the flower in all its Hollywood glamour,” she says.

Slip of the Tongue

The Delilah cocktail tour continues with the Slip of the Tongue, a play on the modern classic Porn Star Martini, perfectly blending Haku vodka, pink guava and Giffard passion fruit liqueur with a shot of Champagne with passion fruit pearls.

“This cocktail is punchy and bright, with an irreverent mischief effervescing in each bubbly and thoughtful detail,” Mercer Boarini says.

Champagne Papi

Last but not least, we have Champagne Papi, which happens to be on the menu at Delilah in Los Angeles.

“Champagne Papi is a gorgeous display on a vintage mirrored tray of Woodinville Bourbon, Velvet Falernum, and mango with a crystal bucket of your own personal mini-Moet bottle of Champagne.” Mercer Boarini says. “This cocktail is equal parts swagger and indulgence.”

Aside from the whimsical cocktail collection, Delilah will also have an over-the-top food menu of steak and seafood selections, tableside presentations and signature dishes created by executive chef Joshua Smith, plus live entertainment each night from female dancers and a jazz band.
