Enter chef John McCarthy’s urban izakaya in Kip’s Bay. The Japanese-inspired restaurant combines authentic elements of the izakaya dining experience with a modern-day approach. McCarthy, owner of The Crimson Sparrow in Hudson upstate, was inspired after spending time traveling, working, eating and cooking in Japan. His dishes involve several cooking techniques – frying, fermentation, raw – and are meant to complement the heady cocktails which he crafted.

Pair the Sakura Sling – house strawberry-infused shochu with gin, pineapple, and lime – with beef tartare stacked with gochujang, pine nuts and shiitake or grilled squid dressed in black garlic oil and Japanese mayo. Get in a Japanese whisky situation with one (or three) of the following: Iwai, Ichiro’s Single Malt, and Akashi White Oak.
