In the heart of Miami's fashionable Design District, Table by Bachour emerges as a stunning addition to the culinary scene. Created by renowned pastry impresario and restaurateur, Antonio Bachour, this restaurant unveils a contemporary Parisian-style brasserie featuring a full bar and a menu that celebrates his classic French training as well as draws inspiration from his Lebanese heritage and the culinary influences he cultivated during his upbringing in Puerto Rico.

Table also features a full bar featuring creative drinks, like the gin-based Mint to Bee created by head mixologist, Francisco Miranda. While made with fresh cucumber mint juice, it has a rather surprising added ingredient of labneh. This housemade Greek yogurt-based cheese -typically served as a dip, does not make the cocktail thick nor creamy, but so light and flavorful that it dangerously masks the gin.‚

This drink came from a personal challenge I gave myself to create a drink that synced up with the restaurant's Mediterranean spirit but stretched the limits of what diners might expect in a drink ‚ i.e., incorporating labneh. I hadn't made a drink that so prominently spotlighted a savory ingredient and I wanted to get out of what I felt like was my own comfort zone. The drink needed to be light and refreshing, on the healthy side; not thick, creamy or heavy. Also wanted something that would work nicely without a spirit. -comments Miranda.

Mint to Bee cocktail recipe + preparation

Ingredients

- 2 Oz Gin
- 3 Tbsp. Honey Labneh*
- 2.5 Oz Fresh Cucumber Mint Juice **
- 1 Tsp Pistachios On Top As Garnish.
- 1 Cucumber Slice

Build

Combine all ingredients to a mixing glass and shake for 10 seconds (without ice). Add ice and shake for 10 seconds. Pour into a glass over ice. Garnish with cucumber slices and crushed pistachios.

*(combine 3 Tbsp Labneh and 1 tsp Honey; mix until smooth)

Fresh Cucumber Mint Juice Recipe

Cucumber Juice

Ingredients:

- 1 Fresh English Cucumbers and 8oz Water.

Build:

Cut the cucumbers in small pieces. In a blender, combine the cucumbers with water and mix until everything is completely blended. Strain with a fine china cap strainer.

Label with date and refrigerate.

2. Mint Syrup

Ingredients:

-2 c Simple Syrup and 1 c Fresh Mint.

Build:

In a kitchen pot, heat the simple syrup until it starts boiling. Add the mint to the pot and cook for 10-12 minutes then turn the heat off. Take the mint out and let the syrup cool down. Label with date and refrigerate.
