Downtown LA bars are putting on unique twists to the classic Boilermaker shot and a beer combo with creative pairings such as hyper-local, craft IPAs with mezcal, pilsners with Italian liqueur, and more.
It’s believed that Boilermakers were named because the workers who built and maintained steam locomotives in the 1800s would sidle up to the bar for this duo after a long day’s work.

Mi Corazon Bar Director Raul Pool includes Mexican-style boilermakers in his bar program, using Mexican beers to pair with mezcal and tequila.

Baldoria’s beverage program includes limited-edition cocktails, rotating craft beers, curated glasses of wine, and a large selection of paired shots and beers. Owner David King envisions his boilermakers as a true craft combo with an idiosyncratic twist by using top-shelf spirits on both ends.

Bar Director Sean Brown recently debuted a new beverage menu, adding a colorful selection of cocktails, shooters, and boilermakers. These options are proof that the boilermaker trend can still be used for its original purpose – a quick and easy choice for when you just really need a drink.
