Drink This Now: Top O’ the Morning at The Underground in Las Vegas

With St. Patrick’s Day just around the corner, it’s time to start thinking about what you may be imbibing for the Irish cultural celebration. For the holiday, most people drink green beer, Irish whiskey, or even Guinness. If you’re not sure what to drink for the occasion, let the skilled mixologists at The Underground, a speakeasy bar at the Mob Museum in downtown Las Vegas, guide you.

“The Underground’s special St. Patrick’s Day cocktail is a spin on the classic Irish coffee, which is served chilled and provides a pleasing caffeine boost,” says Clint Thoman, director of food and beverage at The Mob Museum.

The cocktail Thoman is referring to is called Top O’ the Morning, a blend of Jameson Cold Brew, cold brew coffee and Licor 43. “We thought it would be fitting to name it after the classic Bing Crosby movie, Top O’ the Morning, which takes place in Ireland,” he says.

If you are celebrating St. Patrick’s Day at home, you can make this simple drink using the ingredients and preparation below. For those who will be partying it up in Las Vegas, you can get this seasonal cocktail exclusively at The Underground from March 13-19 for just $10. While you’re there, take advantage of the Guinness and a shot of Jameson special for $12.

Top O’ The Morning recipe + preparation

●      2 oz. Jameson Cold Brew
●      ¾ oz. Cold Brew Coffee
●      ½ oz. Simple Syrup
●      ¼ oz. Licor 43

Add all ingredients to a shaking tin and shake well. Strain into a coupe glass and top it with grated cinnamon.
