Oh yeah, O YA – Now we’re talking.
Tim and Nancy Cushman, the Boston-based, husband-and-wife team who debuted upscale Japanese joint, O Ya last year, recently opened the doors to their third hotel dining venture, Covina on March 17th. Connected directly to the lobby of The Park South Hotel, Covina serves up Mediterranean-accented American fare in a dimly-lit dining room featuring a large U-shaped bar and open kitchen which displays a copper-tiled Ferraro oven for pizza (and hanging red chili peppers). The design, executed by architect, Cass Calder Smith, is inspired by the Cushmans’ years of travel throughout the Mediterranean and Tim’s culinary training in California.
The “Cal-Med” dishes reflect the design. Menu options include hummus, charred broccolini, wood grilled lamb kofte skewers with charred garlic yogurt, house milled farro farfalle with braised greens and parmesan and a classic margherita pizza for one, or four. Hungry yet?
On to the cocktails… Director of Beverage and Services, Ted Kilpatrick created the cocktail menu, which combines classics with signature drinks such as, El Diablo, made with silver tequila and mezcal with ginger syrup, cassis and lime, topped with ginger beer, and served in tall glass – Light and refreshing cocktail with a ginger zing to zap all work-related worries.
Other Covina Cocktails
- Straight Law: Manzanilla Sherry, Plymouth Gin
- Pass the Dutch: Dutch Genever, Apricot, Amaro dell’Erborista
- Boston Flip: Bourbon, Madeira, Egg – Your perfect post-dinner liquor
As for wine, the list offers few esoteric producers, plus international varietals for your liking.
Covina plans to roll out lunch and brunch menus, in addition to launching Covina Café which will offer Counter Culture coffee, along with house-made pastries and sandwiches from pastry chef, Deanie Hickox. A separate entrance to the cafe is located on 27th Street side for grab n’ go action.
Great for: Date Night, After-Work Drinks, Catching Up with Friends, Trendy
