Drink This Now: Silent Séance at Il Bistro in Seattle

Halloween will certainly look a little bit different this year, but that doesn’t mean that the holiday cocktail should be any less spooktacular. And one to try is the Silent Séance at Seattle’s Il Bistro, created by cocktail stylist Adam Way.

Made with a potent blend of mezcal, overproof dark rum, pineapple juice, lemon juice and coffee liqueur, the Silent Séance will not disappoint.

“This cocktail is a riff on one of my favorite tropical cocktails — a Mr. Bali Hai, the signature drink of the Bali Hai Restaurant (San Diego) in the 1960s,” explains Way. “The addition of long pepper was a result of searching for a unique, earthy spice that would pair well with coffee and pineapple.”

Whether you’re looking to cast a powerful spell or conjure up a long-lost spirit, start by drinking this transcendent potion to prepare yourself for going down a rabbit hole of Ouija boards, planchettes, and crystal balls!

Silent Séance recipe + preparation

  • 1.5 oz. Mezcal
  • .5 oz. Overproof Dark Rum
  • .5 oz. Fresh Pineapple Juice
  • .5 oz. Fresh Lemon Juice
  • .25 oz. Coffee Liqueur
  • .25 oz. Simple Syrup
  • 1 dash Aromatic Bitters
  • Long Pepper

Add all ingredients except pepper to a shaking tin, add ice, and shake well. Fine strain into a chilled coupe and garnish with a generous grating of long pepper.
