Margarita Maestro at Doheny Room West Hollywood

Cinco de Mayo may be over, but we are still all about anything tequila, especially when it includes fresh juice. Enter the Margarita Maestro from Doheny Room in West Hollywood. Made with a house-infused pineapple tequila, along with fresh lime juice and honey syrup, this is sure to be your go-to spring and summer sip.

“We wanted to refresh our cocktails for the summertime,” explains Nick Montealegre, Director of Nightlife, SBE. “The tropical flavors of the pineapple-sage and honey really lend themselves to SoCal Sun & Palm trees.”

To make the infused tequila, Montealegre continues, “we infuse 5 liters of Maestro Dobel Diamante tequila with 5 full pineapples, peeled and cut into large chunks and a pound of sage leaves. We allow that to infuse for 3 days in our storage refrigerator. After that, we fine strain out all the loose parts and are left with a beautiful tequila infusion.”

Margarita Maestro at Doheny Room recipe

  • 2 oz. tequila infusion*
  • .75 oz. fresh lime juice
  • .75 oz. honey syrup

We use 2 oz of tequila infusion with .75 oz fresh squeezed lime juice and .75 oz of honey syrup. ( organic honey mixed with equal parts water to balance the sweetness). Shaken and strained. It is served up in a coupe glass and garnished with a sage leaf.
