Clover Club at Bourbon Steak in Nashville

High atop the JW Marriott in Nashville, the bartenders at Chef Michael Mina’s Bourbon Steak are getting creative by taking classic cocktails and offering alternate versions. Guests have the option of sipping the drinks are they were originally concocted – or to try the updated riff.

Take the Clover Club, a take on a pre-prohibition cocktail from Philadelphia. “At Bourbon Steak our twist is not in the cocktail itself, but in the garnish,” explains Head Bartender Seth Weinberg. “An image from the “Girl with Red Balloon” from London-based street artist, Banksy is perched on top of the cocktail. It was a fun way to tie in modern art on a classic cocktail.”

With a base of London Dry Gin along with dry vermouth,  “the botanicals in the Gin are then complemented by fresh lemon juice and bright raspberry syrup,” Weinberg continues. “As a drink in the sour family of cocktails, all the ingredients are emulsified with egg white. The Clover crowd-pleasing pleasing drink that has great texture, acid, sweetness, and a strong spirit backbone.”

Clover Club recipe and preparation

  • 2 oz Beefeater Gin
  • .75oz Lemon Juice
  • .75oz Raspberry Syrup
  • .25 oz Dolin Dry Vermouth
  • 1 Egg White
  • 1 raspberry

Add all ingredients, aside from the raspberry, to a shaker and give them a dry shake. Shake again with ice and double-strain into a cocktail coupe.
